For medium-rare steaks, coat the meat with oil and your favorite seasonings. Since these steaks are flavorful, salt and black pepper are ideal for bringing out its true flavor. Sear the steaks over high heat in a cast-iron skillet for 30 seconds per side. Bake them in a 500°F oven for two minutes per side. For optimal juiciness and flavor, let the steaks rest before serving. For a medium steak, add one extra minute per side in the oven. For rare, have a meat thermometer available and cook in the oven until the internal temperature reaches 125°F.
