- ENHANCE TENDERNESS & MOISTURE—One of the greatest challenges in smoking brisket is not drying it out. To prevent drying your brisket out, wrap two layers of Pink Butcher Paper tightly around the brisket when the internal meat temperature is around 160 to 170 degrees. The rendering fat from the brisket will quickly saturate the paper, forming an oil-based blanket that traps the heat and moisture in.
- ALL ABOUT THE BARK – The bark is the outside crust of your brisket. Most people find the bark their favorite part, and it is often what is judged to determine a successful cook or not. For your bark to set properly, there must be airflow. This is the primary reason why pitmasters prefer using butcher paper over tinfoil when smoking brisket. Tinfoil does not allow airflow and will result in a soggy bark.
